Executive Chef Gianluca Visciglia has been with us at Pullman Lombok Mandalika Beach Resort since December 2021. He brings with him over 25 years of culinary experience, and has honed his craft at international luxury hotels in his homeland Italy, as well as the Philippines, Oman and Indonesia. Along the way, he’s refined his skills with a host of celebrity and Michelin-starred chefs.
“My biggest inspirations are childhood memories and special moments during my life. My aim is to take those inspiring moments and pass them on to my guests through the dishes I create. I believe there should be a little piece of every good chef’s personality in the food they serve.
“My background is in Italian fine dining, and I have a passion for pastry. But I love to be inspired by cuisines from all around the globe, and by the finest and freshest local ingredients I can find. I adore rice. It’s a wonderfully versatile ingredient that can combine with anything and everything. I’m proud of my signature dish Risotto alla Milanese, with its beautiful golden saffron color.
“My ambition is to give my guests a dining experience they won’t forget. When they remember me for a dish I’ve served them, then I know I’ve accomplished my goal.”
